A gin and tonic garnished with a dehydrated lemon wheel

The Perfect Gin & Tonic with a Dehydrated Lemon or Lime Wheel

A great gin and tonic is all about cold, bubbles and a bright citrus finish. Fresh wedges go soft and fade fast; a dehydrated lemon or lime wheel stays crisp in the pouch and looks sharp in a tall glass. Lemon suits floral and citrus-forward gins, lime suits juniper-heavy London dry styles.

What you need

  • 50 ml (1¾ oz) gin
  • 150 ml (5 oz) chilled tonic water
  • Lots of ice
  • 1 dehydrated lemon or lime wheel

How to make it

  1. Fill a highball or balloon glass to the top with ice.
  2. Pour in the gin.
  3. Top with tonic, pouring gently down the side of the glass to keep the bubbles.
  4. Give it one slow stir and slide a dehydrated wheel down the inside of the glass.

The garnish

Pressing the wheel against the side of the glass keeps it visible and lets it slowly perfume the drink. Use one wheel per drink: a 25 g pouch of lemon or lime holds roughly 24 to 26 wheels, enough for a good few rounds.

Make it zero-proof

Swap the gin for a non-alcoholic gin alternative, or simply drop a wheel into sparkling water with ice for a fresh, no-sugar-added sipper.

Please drink responsibly.
